One Pot Pasta Delight

Okay, one of the things you'll learn about me really quickly is that I am not crazy about cooking. That doesn't mean I don't know how I am just not THAT interested in it. My goal in the kitchen 90% of the time is to make something yummy, easy, and FAST! I can do soul food when I have to, but my day to day is around 20 minutes or less of work in the kitchen.

ENTER MY ONE POT PASTA!

There are probably a thousand iterations of one pot pasta recipes online. That is what I love most about this delicious dish. You can tailor it to fit your taste buds and with what you have on hand in the fridge. The name is not designed to confuse you, literally EVERYTHING goes in ONE POT, at the same time!

Here's what I had on hand.

  • Cherry tomatoes
  • White onion
  • Spaghetti
  • Carrots

Yup. That's all. As I mentioned earlier you can make one pot pasta in so many ways, but there are some non-negotiables, at least in my opinion, that should be included every time.

  • Broth
  • Garlic
  • Seasoning
  • Olive oil

For seasonings I used:

  • Garlic powder
  • Chili powder
  • Oregano
  • Red pepper flakes
  • Sea salt

Here are the steps

Cut everything up and put in the pot along with your pasta.

Putting your seasoning in a pretty bowl isn't necessary, but I do it for y'all. :)

Add in your broth. I typically use the entire container if I am making a pound of pasta.

Bring it to a boil. While it's cooking constantly stir it. You don't want your pasta sticking to itself or the bottom of the pot.

After about 15 minutes of stirring all of the broth should be gone and you're left with perfectly cooked veggies and noodles. I like to top my pasta with a little mozzarella.
