Taco Tuesday!

Gotta love a themed day! Taco Tuesday makes my life a little less complicated because, ya know, tacos are so easy! What I love most about tacos, besides how EASY they are, is the versatility. My hubby wanted beef tacos while I wanted shrimp. No need to compromise. We bought enough meat for us to have dinner and lunch the next day and we mixed up our toppings. 

I prefer making my own seasoning versus buying a taco seasoning packet. It only takes about two minutes from pulling the seasonings out of the drawer to putting them in the bowl. The sodium level is much lower too. Try this recipe.

Fun fact: I like to cook my meats in a broth for an extra kick of flavor and to help food simmer without drying out.

I buy peeled and deveined shrimp, again the mantra is EFFICIENCY!

It's all about timing. I made a side of yellow rice that takes about 20-22 minutes to cook. I started that first since it was going to take the longest and needed the least amount of attention. The last thing I cooked was the shrimp since it's done in about 10 minutes. I seasoned both meats with the mix from earlier, but I added some fresh squeezed lime juice to the shrimp while it cooked as well. 

While your meat is cooking start working on your slaw. This is obviously optional, but I love having a variety of colors and textures. Here's the recipe for this yummy slaw.
